BackgroundIgY is a 7S immunoglobulin present in the yolk of immunized hens. The protein has a molecular of about 180 kDa and is composed of two subunits, a heavy chain of 67–70 kDa and a light of 22–30 kDa. IgY is the only class of immunoglobulin in the yolk and, following immunization, IgG from hen’s blood is selectively transferred to the yolk.
